Prekese ( Aidan fruit) is a nutrient-rich, fragrant spice and medicinal plant native to West and Central Africa, derived from the woody, dark-brown pod of the Tetrapleura tetraptera tree. Widely used in West African cuisine—particularly in Ghana and Nigeria—it is highly valued for its strong aromatic, slightly sweet, and pungent flavour, which is commonly infused into soups, stews, and teas.
Key Characteristics and Culinary Use:
- Aroma & Flavour: Prekese has a distinctive, pungent, and "funky" scent that mellows when cooked, adding a savoury, unctuous depth to dishes. It is often described as having tangy, slightly sour, and sweet notes.
- Appearance: It is a long, four-ridged, brownish pod that is typically boiled, soaked, or ground to release its flavour.
- Common Dishes: It is a staple ingredient in Ghanaian light soup, palm nut soup, and various Nigerian pepper soups.
- Usage: The pods can be used whole in soups and removed later or broken up to make herbal teas.
- Other Names: It is known as Aidan fruit (English); Aridan (Yoruba); Uhio/Uhiokrihio (Igbo); and Apapa, Edeminang, or Ighimiaka.
