NIGERIAN KILISHI - 80g or 150g
Nigerian Kilishi is a popular, spicy, sun-dried meat delicacy originating from Northern Nigeria, specifically Hausaland. Often considered a type of Nigerian beef jerky, it is made from thinly sliced, lean beef, lamb, or goat, marinated in a peanut-based spice paste (yaji) before being dried and fire-roasted to a chewy, flavourful finish.
Key Characteristics of Kilishi:
- Preparation: Thinly sliced meat is sun-dried for days to remove moisture. It is then coated in a rich slurry of spices (garlic, ginger, and clove), suya spice (yaji), and sometimes peanut butter (peanut cake).
- Flavours and Texture: It has a smoky, savoury, and spicy taste with a unique chewy texture.
- Ingredients: Common ingredients include beef (or lamb/chevon), peanuts, garlic, ginger, cayenne pepper, onions, and salt.
- Storage: Because it is deeply dried, properly prepared Kilishi can be stored for months without refrigeration.
- Usage: Usually served as a high-protein snack, often paired with cold drinks, pap (akamu), or garri.
It is traditionally made by specialists called Rundawa or Mahauta in Hausa and is popular across Nigeria and in the diaspora.
