Nigerian Usu (or Osu) flour is a traditional, highly nutritious soup thickener, particularly popular among the Igbo people in Eastern Nigeria. It is derived from the dried, ground seeds of Pleurotus tuber-regium (a type of sclerotium/mushroom).
