Nigerian suya & chicken spice (often called 'Yaji') is a savoury, nutty, and spicy dry rub originating from the northern part of Nigeria. It is primarily used to marinate and season meat—traditionally beef, but frequently chicken—before it is grilled over an open fire. The flavour is intensely smoky, spicy, and deeply savoury.

 

Key Components:
  • Roasted Groundnut/Peanut Powder: The base of the mix, which provides a rich, nutty flavour.
  • Cayenne Pepper/Hot Chilli Powder: Provides the signature high heat.
  • Ginger Powder: Adds warmth and pungency.
  • Garlic & Onion Powder: Provides savoury undertones.
  • Smoked Paprika: Adds colour and a smoky aroma.
  • Bouillon/Stock Cubes (e.g., Maggi or Knorr): Essential for that authentic, salty "umami" taste.
  • Optional Spices: Some recipes include white pepper, cloves, or African negro pepper (Uda).

 

How Suya & Chicken Spice is Used:

The spice is used as a dry rub, but when making Suya, it is typically mixed with peanut oil or vegetable oil to form a paste that coats the chicken, allowing the spices to stick and penetrate during grilling. It is incredibly versatile and can be used on the following:
  • Grilled chicken breast, thighs, or wings.
  • As a seasoning for roasted potatoes, veggies, or pasta.
  • A topping for fried eggs or added to stir-fries.

 

Key Differences:
  • Suya vs. Yaji: Suya is the grilled meat dish; Yaji is the spice mix used to make it.
  • Traditional vs. Commercial: Authentic Yaji often uses ground kuli kuli (fried peanut cakes) instead of just roasted peanut powder, providing a stronger fermented, nuttier flavour.
