In Nigerian cuisine, Ngu (often called Ita Ngu) is a traditional, natural thickening and curdling agent, typically made from palm bunch ash or burnt palm fruit kernels. It serves as a healthy, chemical-free alternative to edible potash (Akanwu).
Key Uses and Benefits
- Culinary Staple: It is primarily used by the Igbo people to prepare dishes like Abacha (African salad) and Ukwa (African breadfruit).
- Curdling & Thickening: When mixed with palm oil, it causes the oil to curdle and turn yellow, creating a thick, creamy base necessary for authentic Abacha and Nkwobi.
- Cooking Aid: It helps soften ingredients like beans, ukwa, and fio fio faster.
- Natural Properties: Being derived from ashes, it is rich in minerals such as potassium carbonate and calcium.
How It Is Used
To use Ngu, it is usually ground into a powder, dissolved in water, and then the liquid is sieved and added to the pot or palm-oil mixture to avoid sand or impurities.
