Nigerian Ijebu Ponmo is a popular Nigerian delicacy made from cow skin (ponmo) that is meticulously sun-dried or smoked, resulting in a very hard, tough, and intensely flavoured product. It originates from the Ijebu people of Ogun State, Nigeria. Unlike the soft-boiled ponmo common in many markets, Ijebu Ponmo is prized for its dark colour, unique smoky aroma, and chewy texture.
