- Soya Milk: A nutritious, dairy-free drink made by blending, filtering, and boiling soybeans, often sweetened with sugar or dates.
- Soya Meal / Powder: Dried beans are blended or ground into a powder to fortify pap (Akamu) or custard or to make Tom Brown (a cereal mixture) for children.
- Soya Bean Soup: A thick, protein-rich alternative to Egusi (melon seed) soup.
- Soya Akara / Moin Moin: A savoury snack made by deep-frying or steaming blended soybean paste, similar to traditional black-eyed pea dishes.
How it is Prepared:
- Preparation: Soybeans are washed and soaked in water for 10–12 hours, or until soft.
- Blending: The soaked beans are blended with fresh water until a smooth, thin paste is formed.
- Straining: The paste is sieved through a cheesecloth or chiffon cloth (locally called ase) to separate the milk from the pulp (chaff).
- Cooking: The filtered liquid is boiled for 45 minutes to one hour to ensure it is safe for consumption and to reduce the "beany" flavour.
