Achicha is a traditional Igbo delicacy from Enugu State, Nigeria, made from cocoyam tubers that are boiled, sliced, and sun-dried or smoked to create a preserved, nutty ingredient. It is then coarsely ground or pounded into small flakes, soaked to rehydrate, and simmered with palm oil, leafy vegetables, ugba (oil bean), and pigeon peas (fio-fio).
- Preparation: The dried cocoyam is broken into pieces, soaked to soften, and washed thoroughly before cooking.
- Ingredients: It is commonly prepared with akidi (black beans), fio-fio (pigeon peas), palm oil, ugba/ukpaka (fermented oil bean), onions, scent leaves, and peppers.
- Taste and Texture: When prepared, it has a dense, chewy, and slightly starchy texture with a rich, savoury flavour from the palm oil and spices.
- Nutritional Value: It is rich in dietary fibre, complex carbohydrates, and minerals such as potassium and magnesium.
Achicha is highly regarded as a hearty and nutritious meal, often considered a speciality of the Nsukka people.
